
Taco Salad
40 min. Serves 4.
Ingredients
- 1 onion, chopped and divided
- 1 lb lean ground beef (or mince)
- 1/2 tsp cumin
- 1 tsp paprika
- 1 sm. tomato paste
- 1 (16 oz) can chili (or black) beans
- 1 avocado
- 1/2 lime, squeezed
- 1 cup frozen corn, warmed
- 1 head iceberg lettuce, chopped
- 1 cup chopped tomatoes
- 1 cup sharp Cheddar cheese, shredded
- 4 tbsp sour cream
- 1 (14.5 oz ) pkg tortilla chips
Method
- Saute half the chopped onions for a few minutes
- Add the ground beef or mince and brown it, draining excess fat.
- Add the tomato paste, cumin and paprika (or taco seasoning mix), as well as the beans
- After boiling, simmer for 15 minutes to let the flavors combine
- Mash avocado. Mix in salt, lime juice, paprika, and finely chopped onion to make guacamole.
- Layer the ingredients in a bowl (or each person’s bowl): lettuce, meat/bean sauce, corn, tomato, other half of onions, cheese, guacamole, and sour cream.
- Crush the tortilla chips, and sprinkle over the top for crunch and extra flavor.
