Stuffed Yellow Squash

Ingredients

  • 5 large yellow crooked-neck squashes
  • 1 medium onion, chopped
  • ½ cup water
  • 1 cup stuffing
  • ½ cup walnuts, finely crushed
  • 1 tsp Italian seasonings
  • ½ tsp basil
  • ½ tsp oregano
  • ½ tsp rosemary
  • 1 tbsp lemon juice

Method

  1. Wash squash (approximately 4 inches in diameter) and trim ends.
  2. Cut squash crosswise into halves and scoop out seeds and more to make a bowl. Set aside.
  3. Sauté onions for 5 minutes, then add rest of the ingredients along with the scooped out seeds. Cook on medium for 15 minutes to make a thickened stuffing.
  4. Pack stuffing firmly into squash halves.
  5. Place squash in a roasting pan, cut side up. Fill pan with 1/2 cup water.
  6. Cover with foil and bake at 375 [degrees] F until squash is easily pierced with a fork, about 45 minutes.
