
Peanut Sauce
This is common to Indonesian dishes, such as gado gado and satays. It can also be made using a Petjil Sauce block which is mixed with peanut butter.
Ingredients
- ¼ cup minced shallot or onion
- 1 clove garlic, peeled and minced
- 1 cup coconut milk or water
- ½ cup chunky peanut butter
- 2 tbsp kecap manis (sweet soy sauce)
- 2 tbsp palm sugar
- ½ tsp galangal (ginger root)
- ½ tsp shrimp paste
- 3 kefir lime leaves (djeruk purut), crushed
- Chili pepper (optional)
- 1 tbsp lime juice
Method
- Saute onion and garlic until lightly browned.
- Mix in all but lime juice. Cook and stir until well blended.
- Remove from heat, mix in lime juice, and set aside.
