
Okra Stew (Bamies)
Serves 4.
Ingredients
- 2 medium onions, sliced
- 1/4 cup olive oil
- 1/2 cup parsley, chopped
- 1.5 lbs. of okra (fresh or frozen), stems removed, trimmed
- 1/2 cup plum tomatoes, hand-crushed
- 3-4 cloves of garlic, sliced
- 5-6 allspice berries
- 2 cups of vegetable stock
- salt and pepper to taste
- 4 large potatoes, peeled
Method
- In a pot over medium-high heat, add olive oil and onions and saute for a few minutes. Cover, reduce the heat to medium and and simmer for another 10 minutes.
- Add okra, crushed tomatoes, parsley, garlic, allspice and vegetable stock and bring to a boil. Adjust seasoning with salt and pepper.
- Cover, reduce to a simmer and cook for 30-45 minutes. About twenty minutes into the cooking time, add potatoes (whole) and continue to simmer. The potatoes should be fork tender, the sauce smooth, aromatic with some chunks of tomato. Adjust seasoning with salt and pepper.
- Serve warm with bread and feta.
