Granola

Granola

Makes 4 cups. 45 minutes.

Ingredients

  • 2 cups old fashioned oats
  • ½ cup sunflower seeds, pepitas, or almonds
  • ½ cup dried fruit (raisins, dates)
  • ¼ cup honey (or brown sugar)
  • ¼ cup maple sugar
  • ¼ cup coconut flakes
  • ⅛ tsp salt
  • ⅛ tsp ground cinnamon
  • 2 tbsp vegetable oil

Method

  1. Position rack to middle of oven and preheat to 300*.
  2. Mix oats, nuts and fruit in large bowl.
  3. Combine oil, honey and sugar in small saucepan; bring to simmer over medium heat.
  4. Pour hot liquid over oat mixture; stir well. Toss until thoroughly mixed.
  5. Spread granola on prepared baking sheet.
  6. Bake until golden brown, stirring occasionally, about 30 minutes (check after 20).
  7. Transfer sheet to rack; cool granola completely.
  8. Store in airtight container at room temperature. Lasts 2 weeks.
